"Borsch"

This is my favorite soup, I usually make is without meet.
It is originally Ukrainian dish, made of beef broth, and vegetables. I have already tried a lot of different recipes of this soup, but this one is the easiest, fastest, and in my opinion, the most delicious.













Ingredients:

1 sweet pepper (if desired)
freshly ground black pepper
sea salt
1 tablespoon of lemon juice
herbs
olive oil
2-3 tomatoes, sliced
2 onions, peeled, quartered
2 beets, peeled, chopped
2 carrots, peeled, finely chopped
4 potatoes, peeled, sliced
half of cabbage, finely sliced
1,5 liters of vegetable broth

Directions:

1. Bring 1,5 liters of vegetable broth to boil
2. Add potatoes, and cabbage. You may add sweet pepper as well
3. In a separate cooking pan warm olive oil, and fry onions
4. In a couple of minutes add carrots
5. In 6 min add red beets
6. In 5 more minutes add tomatoes, and lemon juice
7. Let these vegetables steam for 20-25 min
8. The last point is to add steamed vegetables to vegetable broth
9. Add salt, freshly ground pepper, and herbs
10. Bring soup to boil, and turn off
In order for soup to taste really delicious you have to let it stand aside in the closed cooking pot for a couple of hours
Ladle soup into bowls. Top with sour-cream, and remaining herbs
