Cranberry Muffins


Ingredients:
1 egg
1 egg yolk
75g sugar
100g sour cream
125g all-purpose flour
pinch of baking soda
1 cup cranberries
optional:
chopped nuts
powdered sugar

Directions:

1. Whisk egg and egg yolk with sugar until stiff and foamy
2. Add sour cream - mix well
3. Sift all-purpose flour and baking soda - add to the mix
4. Add cranberries
5. Grease muffin baking tray and sprinkle with flour - pour the dough
6. Sprinkle each muffins with chopped nuts 
7. Bake for 15-20 min at 200 deg C (392 deg F)

* When ready sprinkle with powdered sugar

Cranberry Sauce

I love cranberry sauce, especially with Vienna Schnitzel; for me Vienna Schnitzel is not a joy without a jar of homemade sauce. Hopefully this sauce will be a great addition to your Thanksgiving Dinner table!

Let's cook!

Ingredients:
1 cup sugar
1cup water
4 cups fresh or frozen cranberries
Optional: orange zest, nutmeg, cinnamon, allspice, raisins















Directions:

1. Wash and pick over cranberries. In a saucepan bring to a boil water and sugar, stirring to dissolve sugar


2. Add cranberries, return to a boil. Reduce heat, simmer for 10 minutes or until cranberries burst. At this point you can desired spices such as cinnamon, allspice, nutmeg. I like to add orange zest and sometimes raisins


3. When sauce is ready remove from heat. Cool completely at room temperature and then chill in refrigerator. Sauce will thicken as it cools

"Spaghetti with Ricotta and Spring Vegetables"


Ingredients: 

150g spaghetti - my choice is Garofalo
100g asparagus
150g cauliflower
100g ricotta cheese
2-3 tablespoons vegetable broth
1 lemon
1 garlic clove
basil
olive oil
freshly ground pepper
sea salt

Directions: 

*  In a pot boil water, then add sea salt to taste and 1-2 tablespoons of olive oil, cook spaghetti to "al dente"
 
1. Heat deep pan, add 2 tablespoons of olive oil, then add chopped garlic
2. Cut asparagus and cut cauliflower into florets
3. Add vegetables to the pan, fry until golden, then add vegetable broth and stew for 3-4 minutes
4. Mix ricotta with lemon zest and lemon juice, salt, pepper, and add basil
5. Combine the ricotta mix and the vegetables
6. Toss spaghetti with the sauce, if the consistency is too dry or thick add a little bit of water in which spaghetti was boiled
7. Top with fresh herbs and cheese of your choice

"Bavarian Pork"



Ingredients:
1 boneless whole pork loin roast (2-2.5 kg)
3 onions
3 garlic cloves
1 big apple
1/2 kg chopped cabbage
1/2 tablespoon fennel seeds
1/2 liter vegetable broth
sea salt
freshly ground pepper
vegetable oil or 100 g smoked bacon


Directions:
1. Cut the onion into rings
2. In a deep pan warm vegetable oil and fry onions until transparent

* Instead of vegetable oil you can use smoked bacon - warm the pan, add bacon to the pan and fry, then add onion rings
3. Add pork loin, fry on all sides until golden (keep stirring onions while you frying the pork).
When the pork in golden pour half of the vegetable broth and stew for 20 minutes
4. Cut apple into cubes
5. Add chopped cabbage, apple cubes, fennel seeds and garlic cloves to the pan. Salt and pepper, place a lid on the pan and place it in an oven for 1 hour at 392 deg F (200 deg C).

Add some vegetable broth as needed.

In one hour turn the oven off and leave the pork in the oven for 15-20 minutes

How to Make Great Vegetable Broth?

Ingredients:
2 carrots
1 onion
5-6 garlic cloves
1-2 celery stalks
1,5 liters of water
sea salt
fresh ground pepper
bay leaf
basil
majoran
black pepper seeds

Directions:

1. Cut all the vegetables (you may add any vegetables you have, you do not have to cup the vegetables unless they do not fit into a pot). Smash garlic cloves with the side of a large knife to break them up



2. Place the vegetables into boiling water

3. Add the herbs (the amount and types of herbs is up to you)

4. Bring to boil, lower the heat and simmer uncovered for approximately 1 hour, stirring occasionally

5. When ready remove from the heat, let the broth cool

6. Pour through fine strainer, and you are done!

This is a great broth for any kind of cooking: soups, meat, chicken, etc. If you do not want to use all the broth at ones, simply pour it in a container, freeze, and use anytime you want!

"Oatmeal Cookies"

Ingredients:

200g softened butter
150g sugar
2 eggs
1.5 cups cooking oats
1 teaspoon vanilla extract
1 cup raisins
2 teaspoons baking powder or 1 teaspoon baking soda+vinegar
150-200g all-purpose flour


1. Combine softened butter and sugar

2. Add 2 eggs and vanilla extract - mix everything well

3. Add cooking oats - mix well

4. At this point add baking powder, flour, and raisins - continue mixing

5. Then cover the mixing bowl with plastic wrap and put in a fridge for minimum 1 hour

6. With a tablespoon place a small amount of the dough on a slightly greased baking tray, or on a tray covered with parchment paper
Bake for 15-20 min at 356 deg F(180 deg C)

"Very Berry Pie"

Hi friends,

This is one of my favorite pies, I like to eat it with vanilla ice-cream on top. I do not have a photo of cooked pie, because the day I baked it we had some friends over, hence I absolutely forgot to take a picture...sorry :)


Ingredients:

500g any kind of berries ( in my case I had different frozen, as I am more likely to eat fresh berries and not to bake)
200g all-purpose flour
175g frozen butter
pinch of salt
4 tablespoons cold water
50g sugar
2 tablespoons of milk


Directions:

1. Sift flour, add pinch of sugar, cubed sliced butter, and 2 tablespoons of cold water - mix all the ingredients well for a few minutes, then add 2 more tablespoons of cold water and continue to mix

2. When dough is ready form a ball, cover and place in a fridge for minimum one hour
3. After one hour, stretch cooled dough with hands, then roll into big layer 3 mm thick, then place the dough inside slightly greased baking tray

4. Put all the berries on the dough, sprinkle with sugar
5. Fold the edges, covering berries with dough, cover dough with milk using brush, and cook for 30-35 min at 392 deg F ( 200 deg C)

* Serve with ice-cream over, or just sprinkle with powdered sugar
