
This weekend was very slow, yesterday it was raining all day long, so we had nothing to do, but to sit at home. Today was a very nice weather, sunny and fresh. I did not do anything in particular today, that is why I have no major news to share with you, but I sure have something for you, these two new recipes, hope you will try to cook these dishes, and I have no doubt you will love them!
"Spaghetti With Pesto Sauce"
We only eat Garofalo pasta, in the US you can buy it in Costco. We have tried a lot of different, but this one remains the best.
Bring water to boil then add olive oil, and salt. Put spaghetti in the pot, and cook according to the instructions on the package.
Pesto sаuce:
2 big bunches of spinach
150g Walnuts
150g Parmesan cheese
10-12 tablespoons Olive oil
sea salt
ground pepper
Directions:
Using a blander mix all the ingredients well. At the end, salt and pepper to your taste.
I usually make a jar of pesto, you can keep it in the fridge, and eat it whenever you want.
Serving:
Mix spaghetti and pesto, sprinkle with Parmesan cheese
and for dessert we had "Ice-cream Mocha"
Ingredients:
4 egg whites
2 tablespoons of cacao
1 teaspoon of lemon juice
220g of sugar powder
vanilla ice-cream
some extra cacao
heavy cream
dark chocolate
Directions:
Meringues:
1. Beat egg whites with a pinch of salt, add cacao, lemon juice, and sugar powder
2. Grease baking tray ( I needed two baking trays), pure egg whites, make a layer 1.5-2 cm thick
3. Bake for 40 min, at a temperature 180 deg C (356 deg F)
4. When ready set aside for an hour, until it is cooled
5. Cut meringues into even number of slices
6. Place one slice of meringue on the plate, put few scoops of ice-cream, sprinkle with chocolate sauce ( melted chocolate mixed with heavy cream), put another meringue slice on top to make a "sandwich", and sprinkle with some cacao
