Easy - Healthy - Tasty - Pasta

Hello everyone,

When I do not have enough time to cook something complex, I usually go for some pasta. This is one of our favorite recipes.


Ingredients:

100g Spaghetti - my favorite pasta brand is Garofalo
1 Onion
2-3 Garlic Cloves
1 Chili Pepper
Sea Salt
Fresh Ground Pepper
Olive Oil
any vegetables you like, want, or have in a fridge:
Tomato
Pepper
Zucchini
Asparagus
Carrots
Italian Herbs...etc.

Directions:

1. Heat deep pan, pour 3 tablespoons of olive oil
2. Add chopped onion and garlic, fry until golden
3. Cut all the vegetables into similarly sized cubes
4. Add vegetables to the pan
5. Then add chili pepper seeds and Italian herbs
6. In a separate pot boil water, then add sea salt to taste and 1-2 tablespoons of olive oil, cook spaghetti until "al dente"
7. When spaghetti is ready, add them to the vegetables, mix everything well and take off the fire
8. Add a little bit of water in which spaghetti was boiled, 2-3 tablespoons of olive oil, sprinkle with fresh herbs and cheese of your choice
9. Serve :)

"Sweet Pancakes"

These pancakes look a lot like crepes, but in reality they are rather thick and certainly yummy :)


Ingredients:
1 Egg
110g All -purpose Flour
Pinch of Baking Soda
Vinegar
60g Powdered Sugar
150ml Milk
Vegetable Oil

Optional: Yogurt, Berries, Jam, Marmalade, etc.










Directions:

1. Sift flour and combine it with soda+vinegar


* soda+vinegar: in a teaspoon combine a pinch of soda with a couple drops of vinegar


2. In a separate bowl beat egg, milk and powdered sugar

3. Add milk, egg, and powdered sugar mix to the flour mix. Combine everything well
4. Heat frying pan, slightly grease it with vegetable oil











5. Pour a little bit of mix to the pan, distribute evenly on the pan

6. Fry pancake on both sides

* When ready place on a plate, serve with berries, yogurt, jam, marmalade, etc.

"Prigojev's Omelette"

Hello my dear readers, hopefully you all like my new blog layout and my new post concept, let me know what you think! :)
So, today we are going to be cooking omelet for breakfast, this one I created myself this morning and called it "Prigojev's Omelette."



Let's begin
Ingredients:
2 Eggs
2 Tomatoes
4 slices of Bread
6 Asparagus stalks
2 Green Onion stalks
Sea Solt
Fresh Ground Pepper
30ml Milk
3 Garlic Cloves
Parmesan Cheese
Olive Oil

Directions:
1. Fry bread slices on both sides














2. Coat each slice with 1 grated garlic clove












3. Place tomatoes in hot boiling water for a few minutes










4. Peel tomatoes












5. Slice tomatoes into small cubes, make sure to save the juice
6. Chop onion stalks
7. Chop 2 garlic cloves
8. Chop asparagus stalks












9. Heat frying pan, add olive oil. Then add onion and garlic, fry until golden








10. Add asparagus and tomatoes. Cover and stew for 15 min.










11. Heat frying pan, add olive oil and a little bit of butter
12. Beat eggs and milk together, add salt and pepper











13. When pan is hot, pure eggs and place bread slices











14. Add tomato sauce












15. Sprinkle with Parmesan cheese
16. In 1 minute, fold one side of omelet











17. Cover and cook for 2 min














*When ready place on a plate, add some asparagus stalks and sprinkle with parsley

"Roasted Beet Borsch"



Ingredients:

1 Leek Stalk
5-6 Beets
1 Tomato
2 Carrots
1 Sweet Pepper
1 Celery
1 Onion
5 Black Pepper Seeds
1 liter Water
Sea Salt
Fresh Ground Pepper
2-3 Tablespoons of Lemon Juice
Dill
Sour Cream

Directions:

1. Chop leek, celery, place in a deep pot, add pepper seeds, 1.5 liter of water - bring to boil, then reduce heat and cook for approximately 20 min
2. Tomato and sweet pepper cut into small cubes. Chop onion, grate carrots
3. Add a little bit of Olive oil to a frying pan, fry onion until translucent, then add carrots and fry for 5 min. After add tomato and sweet pepper - stew for 15 min. In 15 min, add all the vegetable to the pot
4. Wash and dry beets, cut into thin slices. Place the beets on a baking tray, then salt and pepper, and bake at 356 deg F(180 deg C) for 20 min
5. When beets are ready, cut them into small strips, place on a bottom of a deep bowl, add lemon juice, pure the broth, add sour cream and sprinkle with dill

* Serve with "Garlic Toasts"

"Meat Crepes"


Ingredients:

for crepes:

150g All-purpose Flour
1 egg
325ml Milk
30g Butter
Pinch of Sugar
Pinch of Salt

for filling:

350g Ground Beef
100ml Milk
1 Onion
2 Cloves of Garlic
2 tablespoons Vegetable Oil
4 Tomatoes
1 Mozzarella
1 teaspoon Sugar
1 teaspoon Oregano
Sea salt
Fresh Ground Black Pepper

Directions:

1. Sift the all-purpose flour, add egg, milk, pinch of salt, pinch of sugar and make a dough
2. Melt butter, add to the dough, mix everything well and then fry crepes
3. Chop onion and garlic well, fry on vegetable oil.
4. Grate 1 tomato, add to the onion and garlic, as well as pinch of salt, fresh ground pepper, oregano, and ground beef. Cover and cook on a low heat for 15 min
5. Put 3 tomatoes in a blander, add milk, 1 teaspoon of salt, 1 teaspoon of sugar, and beat everything well
6. On every crepe place 2-3 tablespoons of ground beef, roll the crepe, and put in a deep baking tray
7. Pure all the tomato sauce on the crepes, place small pieces of mozzarella above the crepes, and sprinkle with oregano
8. Bake at 338 deg F (170 deg C) for 25-30 min

"Happy Birthday!!!"

Hello everyone,

It is been forever since I last wrote something here, I have been really busy, though I have some new recipes I would like to share with you.

Recently my husband had a Birthday, instead of going to a restaurant we decided to stay at home, and cook something together.

For breakfast we had "Cottage Cheese Pancakes with Blueberries"


Ingredients:

250g Cottage Cheese
1 egg
1/2 cup Sour Cream
1/2 cup All-purpose Flour
3-4 tablespoons Sugar
Pinch of Salt
Small Pinch of Soda
Lemon Juice
Vanilla Extract

Optional: Dried fruits

Directions:
1. Combine all the ingredients well. If you want to add dried fruits, simply cut them into small pieces, and add to the mix
2. Heat a frying pan, add vegetable oil
3. With a tablespoon place small amount of the mixture on the pan and fry on both sides until ready - 2 or 3 minutes
4. When ready place on a plate, decorate with Blueberries or any other berries or fruits

As a desert for dinner we had


" Summer Pie with Mascarpone Cheese and Berries"


Ingredients:

250g Mascarpone Cheese
250g Cracker Crumbs
60g Butter
1 tablespoon Sugar
1 egg
Vanilla Extract
Any berries

Directions:

for crust:

1. In a medium sized bowl combine cracker crumbs, and melted butter
2. Press the crumbs evenly over the bottom of a plate
3. Cover and refrigerate while you make the filling

for filling:

1. Separate egg white and yolk
2. Beat egg yolk and sugar, then add vanilla extract, Mascarpone cheese, and mix everything well
3. Beat egg white with a pinch of salt until stiff, and carefully mix with Mascarpone cream
4. Place the filling on a dough, and put in a fridge for a few minutes
5. Then decorate with different kinds berries

"Goulash" and "Chocolate Tiramisu With Pears"

Hello everyone!

First, I am really sorry for not writing very often. I have been very busy recently, and did not cook anything, especially this week because my husband was out of town, and I do not normally eat anything but vegetables.

However, yesterday I made dinner, because my husband arrived in the evening.

So, we had my favorite version of "Goulash" and "Chocolate Tiramisu With Pears"
Let's begin with the "Goulash"



Ingredient:

1 pound Beef
3 Grated Carrots
1 Chopped Onion
1 tablespoon All-purpose flour
4 tablespoons Tomato Paste
Pepper seeds
Bay leaf
Fresh Ground Pepper
Paprika

Directions:

1. In a large, deep pan fry chopped onion, and grated carrots
2. Wash and dry beef with a paper towel, cut into small cubes
3. Add meat to the pan, fry for 15 min
4. Add all-purpose flour, and tomato paste, fry for 5 min
5. Add boiling water (the consistency of the goulash should be medium, not too thick, and not too liquid, and the amount of water depends on a size of your pan)
6. Salt, pepper, add pepper seeds, paprika, and bay leaf, mix everything well
7. Reduce heat to a minimum, cover and cook for 25 min

* Serve over some rice, mashed potatoes, or spaghetti



"Chocolate Tiramisu With Pears"



Ingredients:


500g Mascarpone Cheese
200g Dark Chocolate
200g Butter
5 eggs
2 egg Yolks
150g Sugar
extra - 4 tablespoons Sugar
4-5 Pears
100ml Dessert Red Wine
Vanilla Extract
Strong Coffee
Sea Salt

Directions:

preheat over to 338 deg F (160-170 deg C)

1. Melt chocolate over a pot with boiling water, add softened butter, and return over the pot, keep stirring until the consistency is homogeneous
2. Separate egg whites and yolks, return egg whites to the fridge
3. Beat egg yolks with 150g of sugar, add chocolate with butter, and beat again
4. Beat egg whites with a pinch of salt very well and add to the yolks, mix everything well
5. Pour the mix in a baking tray and bake for 40 min. When ready let cool and break up into small pieces
6. Place pears in a deep pot, cover with water and add few drops of vanilla extract, cook f0r approximately 20 min, or until pears are soft
7. Beat 2 egg yolks and 4 tablespoons of sugar over a pot with boiling water, in 4 min add 4 tablespoons of wine, and keep stirring
8. Beat Mascarpone with few drops of vanilla extract, and 2 tablespoons of wine, then add egg yolk cream, and mix everything well
9. Prepare coffee



10. On the bottom of a large glass put a little of Mascarpone cream, then a few slices of pears, few pieces of chocolate biscuit, and pour 1 tablespoon of coffee over the biscuit. Then again put Mascarpone cream, few pieces of pears, sprinkle with grated dark chocolate, then add biscuit, and pour some wine, again Mascarpone cream, sprinkle with grated dark chocolate, and decorate with pieces of pears.
