Today, I am excited to share with you some of my new recipes. I am in love with Austrian cuisine, and made one of its traditional cakes.
But let me start with a "Light Chicken Soup"
Ingredients:
2 Chicken breasts
100g Pasta
200g Vegetables ( anything you have or want: a little bit of a sweet pepper, tomato, zucchini, cabbage, onions, carrots, etc.)
2 tablespoons Soy sauce
Lemon Juice
For broth:
200g Chicken bones
1 Celery stalk
2-3 Garlic cloves
1 Carrot
1 Bay Leaf
4-5 Pepper seeds
Boiling water
Directions:
1. Make a broth - in salted water boil the chicken bones for 40 min.
When broth is boiling, pour off half of the broth and add boiling water (as much as you want). Add grated carrot, chopped celery, and garlic, bay leaf and pepper seeds
2. When broth is boiling add pasta, 1 tablespoon of soy sauce, reduce heat to minimum and let it cook for 7-8 min
3. Wash and dry chicken breasts, slice into small cubes, and fry with 1 tablespoon of soy sauce (without any oil or butter) for 2 min
4. Add chicken to the soup and cook for 4 min. After add all the vegetables and cook until they are ready. When cooked, salt and pepper the soup
When serving sprinkle with lemon juice.
I also made "Garlic Toasts" for serving with the soup.
Ingredients:
Take as much as you want of all the ingredients.
Yesterday's French Baguette
Garlic Cloves
Olive Oil
Directions:
1. Slice bread, get rid of a crust
2. Grate garlic, and coat with it each slice of the bread, on both sides
3. Sprinkle with olive oil, and bake at 356 deg F (180 deg C) for 8-10 min
"Vienna Nut And Chocolate Cake"
250g Walnut
350g softened Butter
5 eggs
150g Chocolate
100g Orange Marmalade
150g Sugar
50g Cane Sugar
50g All-Purpose Flour
2 tablespoons Whipping Cream
1/2 teaspoon Baking Powder
Sea Salt
Directions:
1. Chop walnuts into powder, add baking powder, flour, a pinch of sea salt, and mix everything well
2. Separate egg yolks and whites
3. Combine sugar and butter, add egg yolks one by one, then add flour and walnuts (see step 1), and mix everything very well
4. Beat cooled egg whites with a pinch of sea salt, add cane sugar, and beat until thick and smooth
5. Carefully combine egg whites (see step 4) with dough (see step 3), and mix everything well
6. Pour dough in a greased baking tray, and bake for 40-50 min at 356 deg F (180 deg C). To determine whether the cake is ready pierce it with a toothpick, if it is dry then cake is ready.
7. Cool the cake, take it out of the form and slice into two thin pieces
8. Grease the bottom piece with the orange marmalade, and top with the second piece
9. Melt the chocolate, mix it with the whipping cream, and pour the mix on the cake. Set aside until chocolate to cooled
It tastes best when served with unsweetened whipped cream on a side, in order to reduce the sweetness of the cake.
