"Apple Strudel" - (Apfelstrudel) is a traditional Viennese strudel, a pastry in Germany, and in many countries in Europe that once belonged to the Austro-Hungarian empire (1867-1918).


Ingredients:

30 g cracker crumbs
3 tablespoons cooking oil
1 eggs
80 g raisins
70 g almonds
100 ml warm water
7-8 big apples
50 g sugar
100 g softened butter
250 g all-purpose flour
1/4 teaspoon cinnamon
1 egg yolk
2 tablespoons milk
lemon juice
pinch of salt

Directions:

1. Preheat oven to 220 degrees C.
2. Sift flour into a large bowl, and make a well in the center.
3. Add 1 tablespoon cooking oil, egg, pinch of salt, water, and make a dough.
4. Divide the dough into two parts, add 1 tablespoon of cooking oil into one part, and combine both parts together.
5. Knead slightly, and pat into a round. Lightly brush top of the dough with cooking oil. Cover with inverted bowl, and allow to rest 30 min.

Filling the strudel:

6. Wash, core, and pare apples. Cut into slices, and sprinkle with lemon juice.
7. Chop almonds, and set aside.
8. Place the raisins into a hot water, set aside.
9. Cover a table with a clean cloth, sprinkle with flour.
10. Place the dough in the center of the cloth, and roll into a square, as thin as possible.
11. Brush the dough with the cooled softened butter.
12. Sprinkle the cracker crumbs evenly over buttered dough, leaving the sides free of filling, so they can be folded over apples.
13. Toss on evenly chopped nuts, raisins, and apples. Sprinkle the sugar - cinnamon mixture over the nuts, and fruits. Place a few pieces of butter.
14. Combine egg yolk with milk, brush the free dough with this mixture.
15. With the help of cloth carefully roll the dough. Brush the top with egg yolk+milk mixture.
16. Place the strudel on a lightly greased and sprinkled with flour backing tray.
17. Bake for approximately 40 min, or unlit gold. Brush 2-3 time with the egg yolk+milk mixture during the backing process.

Serve with vanilla souce, cane sugar, or ice-cream.
