"Cottage Cheese Cookies"


Well, normally I am trying not to eat cookies and other sweet things, but this time i could not resist. They are simply delicious, actually, not so many calories, and easy to prepare. Some people may recall this receipt from their childhood.

Takes 10 min to prepare
20-25 or 30-45 min to cook, depends on an oven

Ingredients:

500g cottage cheese
200g softened butter
1-1.5cups sugar
3-3.5cups all-purpose flour
1/2 teaspoon backing soda+vinegar

DIRECTIONS

1. Combine butter with sugar
2. Add cottage cheese
3. Add backing soda, flour, and make a dough
4. Place the dough on a lightly floured work surface
5. Roll the dough until it is 3 mm thin
6. Cut small squares (8x8cm)
7. Put sugar inside the squares (you may add apple, cinnamon, berries...etc. as well - use your imagination)
8. Place cookies on a backing tray lined with parchment paper or on the one that has been lightly greased. Leave some space between each of the cookies to allow for spreading while backing
9. Place the cooking in an oven preheated to 180 degrees C. Bake for 20-25 or 30-45 min, depends on an oven, and an altitude. It took me 45 min to bake them, normally, 20-25 min should be enough
10. Remove cookies from the oven, allow them to cool
